Strawberry Chamomile Cooler

 

Chamomile tea is wonderful in the summer served mildly sweet over ice. It is a delicate tea with hints of honey and apple, a natural floral aroma and subtle earthiness. It is delightful on its own and offers unlimited opportunities as a cocktail mixer. Today we share with you a tall drink built on the foundation of chamomile married to a strawberry simple syrup. The base itself can be enjoyed as a non-alcoholic fruited iced tea (your kids will love it) and when mixed with your preference of either Vodka or Gin, makes a fantastic summer long drink that will make you the hero when hosting your next summer gathering.

 

Strawberry Chamomile Cooler

In a shaker glass filled with ice add:

  • 1 ½ Ounces of Well-Bred Vodka or Gin (your preference)
  • 1 Ounce Strawberry Simple Syrup*
  • ½ Ounce Fresh Squeezed Lemon Juice
  • 3 Ounces Chilled Chamomile Tea

Shake till painfully cold.  Strain over fresh cracked ice into a tall Collins glass.  Garnish with a large dead ripe strawberry.  

 

*Strawberry Simple Syrup

In a medium saucepan add:

  • 1 Cup Granulated White Sugar
  • 1 Cup Water

Bring to a boil slowly over a medium heat stirring to incorporate the sugar.  Reduce heat then add:

  • 1 Pint of Fresh Strawberries (Hulled)

Cover and simmer for 15-20 minutes over a low heat.  Shut off heat and let syrup cool.  Strain through a fine sieve removing any seeds or pulp.  Syrup will keep for one week refrigerated.
