Pineapple-Basil Smash

As the weather warms, we look to cocktails that are a bit more tropical in nature. Pineapple is a go-to for fun-fruity drinks with its bright sweet-tart nature and compatibility with most all light spirits. In comes the Pineapple-Basil Smash. A smash is made by muddling fresh fruit with spirits and serving it up tall with crushed ice so that not only is the drink refreshing, but it also has bits of fresh fruit to nibble along the way. We add Basil into this smash for an herbal accent that plays along well with all the other charms this cocktail has to offer.   

Pineapple-Basil Smash

In a cocktail shaker add:

• ¼ Cup of Fresh Diced Pineapple
• 2 Tablespoons of Sliced Fresh Basil
• 1 ½ Ounces Gold Barbados Rum

Muddle everything together, add crushed ice then add:

• 2 Ounces of Pineapple Juice
• ½ Ounce Fresh Squeezed Lime Juice
• ½ Ounce of Simple Syrup

Shake till painfully cold.  Transfer ingredients ice and all into a tall Collins glass.  Top with a splash of club soda.  Garnish with a sprig of basil.
